Chef Rocco Lugrine’s Decadent Macaron Recipe

The mouth-watering confections of Chef Rocco Lugrine wowed Flower Show crowds. Now is your chance to test your culinary skills by trying this popular recipe at home. Whether you spell it macaron or macaroon, you’ll agree this is a tasty treat! 

Chocolate Macaron with Caramel Sea Salt Ganache

Chocolate Macaron

  • Whip 5.5 oz of egg whites with 3 oz of granulated sugar until firm peak
  • Sift together 10 oz powdered sugar, 5.5 oz almond flour, and 1.25 oz cocoa powder
  • Fold the sifted powders into the whipped egg whites until smooth
  • Pipe 1-inch onto a silicon-baking mat
  • Bake at 300F for 14-15 minutes

Caramel Sea Salt Ganache

  • Caramelize 7 oz of sugar
  • Add 13 oz of heavy whipping cream slowly, taking caution to prevent the caramel from seizing
  • Boil the caramel and pour over 15 oz of 64% dark chocolate and 9 oz of 38% milk chocolate
  • Make an emulsion
  • Pipe onto 1/2 of the macaron shells, then sandwich them together
  • Sprinkle 1/2 teaspoon of sea salt
  • Sandwich shells together and enjoy!

The Flower Show Queen: Hope Fox Coates

There is no one who knows Flower Shows better than Hope Fox Coates, who has been arranging flowers (and winning for her arrangements) for 50 consecutive years.

After following her mother to the Show for many years, Hope started creating her own arrangements in 1961 when things were a little different. “They used to have seven different niches, one for each day,” Hope reminisces, “We were over at the Civic Center and it was much smaller and more intimate back then.”

Over fifty years, the Flower Show has, of course, changed and grown, and while Hope was overwhelmed at first, she welcomes most of the changes that have occurred. “I really love the marketplace. It’s great for meeting and interacting with people.”

Hope talks about the “Flower Show aura” that keeps the entrants coming back year after year. For Hope, her fellow arrangers are like an intimate family and are always there to lend a helping hand. But her biggest supporters are her mother and her daughter, who now helps Hope with her arrangements and watches the family animals in Maine when Hope comes to Philadelphia. (more…)

Everyday at the Flower Show visitors are invited to vote for their favorite display in the PNC People’s Choice Award. It’s near impossible to select just one, but hundreds of people rose to the occasion, and three voters were randomly selected to win outstanding prizes. Here is the run-down on all the winners.

Start Your Spring with PHS!

If you’re a somewhat new to the Flower Show scene, you might not know the sorts of things PHS offers the rest of the year Here are some late March events and workshops to help you celebrate warmer temperatures and longer days.

PHS Garden Tenders – Spring Session

Calling all city residents looking to start or cultivate a garden! PHS is offering a spring session of its ever-popular Garden Tenders. Beginning on March 23 and continuing for six Wednesday evenings (plus a special Saturday workday), this class is your opportunity to reinvent your neighborhood!

PHS Tree Tenders – Montgomery County

Residents of Montgomery County can make their hometown greener and healthier by becoming PHS Tree Tenders. This comprehensive training—spanning three Mondays starting March 28—will transform you into the tree hugger you secretly always wanted to be.

PHS Gardening Series – Tips for Planning the Spring Garden

If you are a seasoned gardener looking for some new techniques for planning your garden and picking out plants, attend the free lecture led by Robin Potter on Wednesday, March 30 at the Montgomery County – Norristown Public Library.

Meadowbrook Farm Workshop – Divide and Conquer

Some of the best varieties you can plant this spring are right in front of you, just waiting to be increased in number. This hands-on course will turn the apprehension of propagation into a delight of discovery and success. See for yourself on Thursday, March 31.
